Caesar Salad
Chill four salad forks and four large salad plates. Clean 1 meduim head of Romaine lettuce and tear into a little smaller than bite sized pieces. Place in ice water for five minutes. Drain well, and transfer into plastic bag and then into refrigerator.
Prepare the Dressing . . .
1 Teaspoon Pressed Garlic
2 Tablespoons Mayo
1 Teaspoon Dijon Mustard
½ Teaspoon Anchovy Paste
7 Drops Tabasco
1 Teaspoon Worchestershier
½ Teaspoon Red Wine Vinegar
1 Tablespoon Olive Oil
Fresh Grated Parmesan Cheese.
Fresh coarse ground pepper.
Make sure the lettuce is completely dry, yet thoroughly chilled before mixing the dressing.Place all ingredients in a large glass or wooden bowl. Use a wire wisk or the rounded part of a spoon, mix ingredients together to form a smooth dressing. Drop enough dry, chilled lettuce to serve four people on top of the dressing and use your hands (optional) to coat the lettuce leaves with dressing. Portion out onto chilled plates and garnish with cheese and pepper.
Notes:
I like a quartered hard boiled egg on top and some croutons.
DO NOT MAKE THIS FOR Valentines Day dinner. The garlic breath created by this salad is only matched by how good it tastes when you eat it.
