View Full Version : Chicken Enchilada Stuffing!!

i love to cook... but never had the time or inclination to make chicken enchilada... i was cruzing through the fridge and found some chicken that needed to be cooked... well i seared three chicken breasts, then deglazed the pan with water and broth... let slow cook for 3 hours (depending on amount of chicken)... then added some onion and bell pepper.
seasoned chicken with:
salt
pepper
garlic
paprika
habinero tobasco sauce (muy caliente lol!)... :wink:
now i just gotta wrap the filling and bake... mmmmm!

thanks guys.... i am not from mexico but i was raised in los angeles and all my friends growing up were latino... thats a good thing when your a gringo living in the barrio... : )
i love mexican food - up here in the inland northwest you dont find too many authentic places though.
damn i got go down south and get some of those 50 cent tacos from TJ and a pacifico!

amigo, whats up with the tequilla :wink: ... last time i was down there i had some that came from a big water bottle, and in the bottle there was a pickled rattle snake in it - instead of a worm..... good stuff!
please pay my respects to good old montazuma for me.

tequila is good. but raicilla is better. it is illegally produced for something :047:
